This no-bake Strawberries and Cream recipe (called fresas con crema in Mexico, where it originated) is the kind of light, healthy treat I crave all summer long! Aren’t simple treats sometimes the best? I’m talking peaches with ice cream, rice krispie pastries, and strawberries and cream.
Sour cream, evaporated milk, heavy cream, sweetened condensed milk, and vanilla make the cream sauce. The sauce is spooned over fresh strawberries in a cup.
If you prefer, use frozen strawberries and top with whipped cream or easy whip!
This recipe uses sweetened condensed milk, usually La Lechera in Mexico. It’s a refreshing dessert or snack.
Fresas with crema requires sour cream, sweetened condensed milk, evaporated milk, whipped cream, a bowl of sliced strawberries, and vanilla essence.
Slice strawberries thinly.
In a bowl, combine the sour cream, evaporated milk, heavy cream, sweetened condensed milk, and vanilla.
2 minutes of electric mixing.
Half a cup of cut strawberries. Top with 1/2 cup cream mixture.
If desired, top with whipped cream.
A spoonful of crème and a tumbler of sliced strawberries.
- ▢32 ounces fresh strawberries , hulled
- ▢16 ounces sour cream (or plain greek yogurt)
- ▢2/3 cup evaporated milk
- ▢2/3 cup heavy whipping cream
- ▢14 ounces sweetened condensed milk , la lechera
- ▢1 tablespoon vanilla extract
Grease a 20cm square glass dish.
Mix together the biscuit crumbs and butter and press evenly into the base of the dish.
Place in fridge to set (this will only take a few minutes).
To make the filling, sprinkle the gelatine over the boiling water and whisk until dissolved. Cool.
Beat together the condensed milk and lemon juice, then stir in the cooled gelatine mixture. Pour over the biscuit base.
Place in fridge to set (this will take about 30 minutes).
To make the topping, roughly chop 1 punnet of the strawberries and place in a saucepan with the sugar and water.
Bring to the boil and simmer for 5 minutes.
Strain off the liquid.
Sprinkle the gelatine over the boiling water and whisk until dissolved.
Stir into the strawberry liquid. Leave to stand until just beginning to set.
Meanwhile, cut the other punnet of strawberries into slices.
Spoon a thin layer of the strawberry liquid over the set filling and place strawberry slices decoratively over the top.
Carefully spoon the remaining liquid over the strawberries and place in fridge to set.
